Проєкт птахопереробного цеху продуктивністю 18,8 т м’яса птиці за зміну

Abstract

У кваліфікаційній роботі розроблено проєкт птахопереробного цеху з цілозмінною потужністю 18,8 т готової продукції. Проведено комплексне техніко-економічне обґрунтування доцільності будівництва та проаналізовано динаміку поголів’я птиці. На основі розрахунків обсягів сировини та виходу продуктів забою детально описано технологію первинної переробки птиці. Визначено площі виробничих цехів, допоміжних приміщень і загальні параметри забудови, а також розраховано баланс енерговитрат. Графічна частина проєкту містить генеральний план, схему будівлі з експлікацією обладнання, план цеху та апаратурно-технологічну схему переробки сухопутної птиці. Крім того, обґрунтовано оптимальний асортимент продукції, сформовано заходи з ветеринарно-санітарного контролю та організації виробничого процесу на підприємстві. Пояснювальна записка міститься на 61 сторінках. Графічна частина виконана на 4 аркушах.

In the qualification work, a project of a poultry processing plant with a whole-shift capacity of 18.8 tons of finished products was developed. A comprehensive feasibility study on the feasibility of construction was carried out and the dynamics of the poultry population were analyzed. Based on calculations of raw material volumes and yield of slaughter products, the technology of primary poultry processing is described in detail. The areas of production shops, auxiliary premises and general parameters of the building were determined, as well as the balance of energy consumption was calculated. The graphic part of the project contains a master plan, a diagram of the building with an explanation of the equipment, a workshop plan and an equipment and technological scheme for the processing of land poultry. In addition, the optimal range of products is substantiated, measures for veterinary and sanitary control and organization of the production process at the enterprise are formed. The explanatory note is contained on 61 pages. The graphic part is made on 4 sheets.
