Abstract

У даному проєкті виконано комплекс технологічних розрахунків та розроблено проєкт птахокомбінату продуктивністю 22,5 т м’яса птиці за зміну. У роботі наведено техніко-економічне обґрунтування проєктних рішень і проаналізовано тенденції розвитку галузі, зокрема динаміку зміни поголів’я птиці. На основі проведених розрахунків визначено виробничі площі окремих цехів і допоміжних приміщень, встановлено загальну площу забудови підприємства та розроблено раціональне компонування виробничих підрозділів. Крім того, виконано розрахунки енергетичних витрат, необхідних для забезпечення виробничого процесу. У графічній частині проєкту представлено генеральний план підприємства, плани будівлі та розміщення технологічного обладнання, а також поздовжній і поперечний розрізи виробничого корпусу. У ході виконання роботи проведено аналіз вихідних даних, обґрунтовано вибір асортименту продукції, що найбільшою мірою відповідає потужності підприємства, виконано необхідні технологічні розрахунки та обрано оптимальне планувальне рішення щодо розміщення виробничих приміщень.Окрему увагу приділено питанням організації виробничого процесу та системі ветеринарно-виробничого контролю, спрямованій на забезпечення безпечності та належної якості продукції. Пояснювальна записка викладена на 46 сторінках друкованого тексту, а графічна частина складається з 4 аркушів формату А1.This project presents a set of technological calculations and the design of a poultry processing plant with a production capacity of 22.5 tonnes of poultry meat per shift. The work provides a feasibility study of the proposed design solutions and analyzes the development trends of the poultry industry, particularly the dynamics of poultry population changes. Based on the calculations performed, the production areas of individual workshops and auxiliary facilities were determined, the total building area of the enterprise was established, and a rational layout of production units was developed. In addition, energy consumption calculations required for the operation of the production process were carried out. The graphical section of the project includes the master plan of the enterprise, building layouts with the arrangement of technological equipment, as well as longitudinal and cross-sectional drawings of the production building. During the project implementation, the initial data were analyzed, the product range most suitable for an enterprise of this capacity was substantiated, the necessary technological calculations were performed, and the optimal planning solution for the arrangement of production facilities was selected. Special attention was paid to the organization of the production process and the system of veterinary and production control aimed at ensuring product safety and quality. The explanatory note consists of 45 pages of typed text, while the graphical part comprises 4 sheets of A1 format.
